Lemon Bars Recipe

okay guys! This sweet recipe takes my Baking with essential oils to a whole new level. Like lemon bar heaven level. They are Zesty, the perfect Sweetness and are gooey! So if you are ready to get your lemon Bars on Keep reading. The awesome thing is they are also simple to make and gluten free! They can also be altered to be vegan as Well 🙂

For the crust:

I Cup butter (softened)

2 cups 1 for 1 gluten Free flour

1/2 cup powdered Sugar

1/4 tsp Sea salt.

For the filling:

4 Eggs (4 tsp ground flaxseed for vegan

2 cups sugar

3 tsp lemon juice

1 tsp water (5 tsp for Vegan)

1/4 cup cornstarch

6 drops lemon essential oil

For the topping (after baking):

1/3-1/2 cup powdered sugar

1 drop lemon essential oil

*mix butler, flour, 1/2 cup powdered sugar & salt in a pastry blender. Press into the bottom of a 9×13 pan. Bake at 350 degrees for 15 min. Mix eggs & sugar until fluffy. Add lemon juice, essential oil, water & cornstarch. Pour mixture over Semi cooked crust & bake for 25-30 more min. Mix powdered sugar & the 1 drop lemon eo in a baggie & shakeup. When lemon bars are done Sprinkle the lemon eo infused sugar on top. Put Bars in refrigerator to cool for 20 min. before cutting & Serving.
